For our last Mother’s Day post this week, we are sharing two delicious recipes with you from our Mother’s Day Brunch with Frontgate. Come see how to make this super easy Watermelon Feta Salad and Pink Grapefruit Mocktail/Cocktail that we love to make!
Watermelon Feta Salad
1/4 cup balsamic vinegar
2 tbsp fresh mint, cut into thin strips
1/2 cup olive oil
8 oz red seedless watermelon, cut into 1″ cubes
1/4 cup crumbled greek feta cheese
2 tbsp sliced almonds
Salt and pepper to taste
In a Carleton Varney Caning Serving Bowl, whisk together the balsamic vinegar, mint and olive oil <you can also add a 1/2 tsp of minced garlic and/or shallot>. Season with salt and pepper to taste. Pour the vinaigrette over the watermelon and gently toss evenly to coat. Sprinkle the feta and almonds throughout the salad. Serves 6. Looks great served in/on any of Carleton Varney’s Bowls or Plates!
Pink Grapefruit Mocktail/Cocktail
Non-alcoholic Drink Dispenser Ingredients:
Frontgate’s Optima Chill Cell Beverage Dispenser <we used the 5 gallon one, so it took quite a bit of liquid to fill up!>
Equal parts fresh ruby red grapefruit juice and club soda
Fresh fruit slices to float in drink dispenser: any fruit will do, but we love any combo of citrus slices <like grapefruit, lemons, limes and oranges>, strawberries, watermelon and/or mint leaves
Ice for top compartment of drink dispenser – keeps drinks cool without dilution or condensation!
Combine the grapefruit juice and club soda in the drink dispenser and stir in the fruit slices. Add ice to the top compartment of the dispenser. Serve non-alcoholic drink mixture in a Carleton Varney Caning Glass with ice, a striped paper straw, fresh mint garnish and a Palm Beach Lately Cocktail Napkin!
To add alcohol:
Add ice to a Carleton Varney Caning Glass. Pour juice mixture from dispenser about half way, add champagne to almost fill the glass and top with a splash of St. Germain Elderflower. Serve drink with a striped paper straw, fresh mint garnish and a Palm Beach Lately Cocktail Napkin!
